Ingredients:
- 2 cups cooked rice
- 1/2 lb pork, thinly sliced
- 1 cup corn kernels
- 10-12 shishito peppers, sliced
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger, grated
- Salt and pepper to taste
- Green onions for garnish
Instructions:
In a large pan or wok, heat the vegetable oil over medium-high heat
Add the grated ginger and minced garlic, and saut for one to two minutes, or until fragrant
Add the thinly sliced pork and cook for 45 minutes, or until it is crispy and brown
Place the sliced shishito peppers on one side of the pan, then push the pork to the other
Simmer for 2 to 3 minutes, or until they start to blister and get a little charred
Add the corn kernels and cook for an additional two minutes, or until thoroughly heated
Cooked rice should be added to the pan and stir-fried for two to three minutes to break up any clumps and let the rice absorb the flavors
Combine the oyster sauce, sesame oil, soy sauce, and a dash of salt and pepper in a small bowl
After adding the sauce, toss the fried rice to combine
Simmer for a further two to three minutes so that the rice and other ingredients are evenly coated with sauce
Add some chopped green onions as a garnish, then serve hot
