Vegan Baklava

A vegan twist on the classic Middle Eastern dessert, baklava. Layers of crispy phyllo dough filled with a sweet and nutty mixture, drenched in a maple syrup glaze.

Ingredients:

  • 1 cup chopped walnuts
  • 1 cup chopped pistachios
  • 1/2 cup coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup vegan butter, melted
  • 1 package vegan phyllo dough about 16 sheets
  • 1 cup maple syrup
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions:

Warm the oven up to 175F 350C

Put the pistachios, coconut sugar, cinnamon, and cloves in a bowl and mix them together

Melt vegan butter and brush it on a 9x13-inch baking dish

Spread vegan butter over one sheet of phyllo dough that you put in the baking dish

Add five more sheets of phyllo dough and brush each one with melted butter

Spread half of the nut mixture out over the layers of phyllo dough

On top, put five more sheets of phyllo dough and brush each one with melted vegan butter

Cover the phyllo dough layers with the rest of the nut mixture

Place the rest of the phyllo dough sheets on top and brush each one with melted vegan butter

Cut the baklava into squares or diamonds with a sharp knife

It should be baked in a hot oven for 45 to 50 minutes, or until it turns golden brown

Put maple syrup, water, lemon juice, and vanilla extract in a saucepan and mix them together while the baklava is baking

Bring to a boil, then lower the heat and let it cook for 15 minutes

As soon as the baklava is done baking, take it out of the oven and pour the syrup evenly over the hot baklava

Let the baklava cool all the way down before you serve it so that the syrup can soak in
