Ingredients:
- 2 cups non-fat Greek yogurt
- 1/4 cup fresh lemon juice
- 2 tablespoons honey or maple syrup
- 1 teaspoon lemon zest
- 1 cup fresh strawberries, diced
- 1/4 cup almonds, chopped
- 1/4 cup unsweetened shredded coconut
Instructions:
In a mixing bowl, combine the Greek yogurt, fresh lemon juice, honey or maple syrup, and lemon zest
Mix well until smooth and creamy
Line a baking sheet with parchment paper or a silicone baking mat
Spread the yogurt mixture evenly onto the prepared baking sheet, creating a thin layer
Sprinkle the diced strawberries, chopped almonds, and shredded coconut evenly over the yogurt layer
Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the yogurt bark is firm and can be easily broken into pieces
Once frozen, remove the yogurt bark from the freezer and break it into bite-sized pieces
Serve immediately as a healthy frozen yogurt snack or dessert
