Grilled Chicken Kabobs with Potatoes, Brussels Sprouts, and Feta are a tasty and filling meal that can be served at any time. Ingredients:
- 1 lb chicken breast, cut into chunks
- 1 lb baby potatoes, halved
- 1 lb Brussels sprouts, trimmed and halved
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
Olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper should all be mixed together in a bowl
Combine well
On skewers, alternately thread chicken chunks, baby potatoes cut in half, and Brussels sprouts cut in half
Apply the marinade to the skewered foods with a brush
Warm up the grill over medium-high heat
For 10 to 12 minutes, turning the kabobs every now and then, until the chicken is cooked all the way through and the vegetables are soft
After the kabobs are done cooking, top them with crumbled feta cheese and serve right away
