Ingredients:
- 1 box brownie mix
- 1/4 cup vegetable oil
- 2 large eggs
- 1/4 cup water
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 2 cups semi-sweet chocolate chips
- 3 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Instructions:
Preheat the oven to the temperature specified on the brownie mix box
In a mixing bowl, combine the brownie mix, vegetable oil, eggs, and water
Mix until smooth
Spoon the brownie batter onto a baking sheet in tablespoon-sized portions, spacing them apart
In a separate bowl, mix together peanut butter and powdered sugar until well combined
Form small balls of the peanut butter mixture and flatten them into discs
Place a peanut butter disc on top of each brownie batter portion, pressing down slightly
Bake in the preheated oven for the time specified on the brownie mix box, or until the brownie cookies are set
Once the cookies are baked, let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
In a microwave-safe bowl, melt the chocolate chips and unsalted butter in 20-second intervals, stirring in between, until smooth
Stir in the vanilla extract into the melted chocolate mixture
Dip each cooled cookie into the melted chocolate, covering the peanut butter top
Place the dipped cookies on a parchment-lined tray and allow the chocolate to set
Once the chocolate has set, the Buckeye Brownie Cookies are ready to be enjoyed
