A hearty and flavorful Minestrone Soup that is easy to make in the Instant Pot by mixing different kinds of pasta, beans, and vegetables. Perfect for a quick and tasty meal
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz diced tomatoes
- 4 cups vegetable broth
- 1 cup small pasta
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 cups spinach, chopped
- Grated Parmesan cheese for serving
Instructions:
Put the Instant Pot in saut mode and heat the olive oil
Put in the garlic, onion, carrots, and celery
Cook the vegetables in oil until they get soft
Zucchini, kidney beans, diced tomatoes, oregano, basil, thyme, salt, and pepper should all be added at this point
Mix well
Put the lid on top of the Instant Pot and close it
Set the pressure to high for 5 minutes
When youre done, quickly let go of the pressure
Add chopped spinach and stir until it wilts
Grate some Parmesan cheese on top and serve hot
