Ingredients:
- 1 cup 2 sticks unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped peppermint patties about 12 mini patties
- Additional peppermint patties for stuffing optional
- Crushed candy canes for topping optional
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the eggs one at a time, then stir in the vanilla extract
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the chopped peppermint patties until evenly distributed throughout the cookie dough
If desired, take a tablespoon of dough and flatten it in your hand
Place a mini peppermint patty in the center and wrap the dough around it, rolling it into a ball shape
Place the stuffed cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart
If you prefer, gently press an additional peppermint patty on top of each cookie for extra decadence
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Optional: While the cookies are still warm, sprinkle some crushed candy canes on top for a festive touch
