Irish Pancakes

Irish pancakes are a delightful treat that can be enjoyed for breakfast or as a snack. They are slightly thicker than traditional crepes but thinner than American-style pancakes, offering a perfect balance of flavor and texture.

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp vanilla extract

Instructions:

Whisk the flour, baking powder, salt, and sugar together in a bowl

Put the egg in a different bowl and beat it

Then add the buttermilk, melted butter, and vanilla extract

Combine well

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Its okay if there are lumps in the batter; dont mix it too much

Put a nonstick griddle or skillet over medium-low heat and lightly coat it with cooking spray or butter

Each pancake should be about 4 inches across, so pour a ladleful of pancake batter onto the pan

Two to three minutes of cooking should be enough to make the top bubble and the edges look set

For an extra one to two minutes, or until they are golden brown and cooked all the way through, flip the pancakes over

Move the pancakes to a plate and keep them warm while you cook the rest of the batter

When the Irish pancakes are still warm, top them with your favorite things, like powdered sugar, fresh berries, or maple syrup
