A delicious vegan burrito featuring BBQ jackfruit as the star ingredient, packed with flavor and wholesome ingredients.
Ingredients:
- 1 can jackfruit in brine, drained and shredded
- 1/2 cup barbecue sauce
- 1 cup cooked rice
- 4 large tortillas
- 1 cup black beans, cooked
- 1 avocado, sliced
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
Preheat oven to 350F 175C
In a mixing bowl, combine shredded jackfruit with barbecue sauce
Mix well
Spread the jackfruit mixture on a baking sheet and bake for 20 minutes
Warm tortillas in the oven or microwave
Assemble burritos by layering rice, black beans, baked jackfruit, avocado slices, diced tomatoes, red onion, and cilantro on each tortilla
Squeeze lime juice over the fillings and season with salt and pepper
Fold the sides of the tortilla over the fillings and roll tightly to form a burrito
Serve immediately or wrap in foil for later
